Vegan Asian Soup Recipe: Nourishing Your Body (And Soul)
This vegan Asian soup is a delightful fusion of flavors and nutrients. This recipe not only provides a delicious meal but also offers various health benefits from its nutritious ingredients. Here’s how to make this flavorful and healthy soup, along with the nutritional values and benefits of each ingredient. This truly is an excellent and quick recipe bursting with flavor, I can easily say that this is one of my go-to recipes whenever I crave something comforting but don't have much time (or energy) to cook :)
Ingredients for the Soup:
250 ml Coconut Cream
1 tbsp Gochujang Paste
3 Cloves of Garlic
1/2 Fresh Hot Pepper
1 Stick of Lemongrass
Optional: Thai Basil
2 tbsp Soy Sauce
1 tbsp Sesame Oil
Green Onions (for garnish)
Additions to the Soup:
Udon Noodles (or any other noodles you prefer)
1 Package of Tofu
1 Bok Choy
1 Package of Mushrooms (recommended: King Oyster Mushrooms)
Sauce for Tofu and Mushrooms:
1/2 Cup Soy Sauce
1/2 tsp Coriander Powder
1 tbsp Honey or Maple Syrup
Preparation Steps
Prepare the Aromatics:
Chop the garlic and hot pepper. Cut the lemongrass into large pieces; twist and crush it slightly to release the aroma.
Fry the Aromatics:
In a large pot, add a bit of oil and fry the lemongrass, garlic, and hot pepper until fragrant.
Add Flavor Base:
Add the gochujang paste, soy sauce, and sesame oil to the pot. Stir and mix well to combine the flavors.
Create the Soup Base:
Pour in the coconut cream and let it reduce a bit. Then, add about two glasses of water (or adjust to your taste) to balance the soup. Let it simmer and reduce.
Prepare the Tofu and Mushrooms:
While the soup is simmering, prepare the sauce for the tofu and mushrooms by mixing the soy sauce, coriander powder, and honey or maple syrup in a bowl. Set aside.
Cut the tofu into strips and slice the mushrooms in half.
Heat a frying pan and sear the tofu and mushrooms until browned and the mushrooms release their liquid. Add the sauce to the pan and let the tofu and mushrooms absorb the flavors.
Cook the Bok Choy:
Place the bok choy in a frying pan with a little water to steam it. Once tender, add a bit of oil and cook until it gets a nice charred color.
Assemble the Soup:
Cook the udon noodles according to the package instructions.
In serving bowls, place a portion of udon noodles and pour the hot soup over them.
Top with the tofu, mushrooms, and bok choy.
Garnish with chopped green onions and optional Thai basil.
